Crustless Bacon & Cheese Quiche

5 green onions, chopped
1 tomato, seeded & chopped
3/4 lb. bacon
1 C. sliced fresh mushrooms
12 eggs
1/3 C. sour cream
1 C. cheddar cheese, shredded
1 C. mozzarella, shredded

Heat oven to 325 degrees. Cook bacon in large skillet until crisp. Drain, reserving 1 T drippings in skillet. chop bacon. Add mushrooms & cook until tender. Remove from heat. Add onions, tomatoes & chopped bacon. Mix well. In large bowl, beat eggs & sour cream until blended. Add bacon & veggie mixture to eggs. Pour into greased 9X13 pan and Bake for 30 minutes or until set. Let stand 5 minutes before cutting to serve.

Crustless Mushroom & Spinach Quiche

1 T. butter
8oz fresh mushrooms, sliced
1 medium onion, chopped fine
10 oz frozen spinach, thawed & drained
5 eggs
1/2 C. heavy cream
1/2 t. salt
1/4 t. pepper
8 oz sharp cheddar cheese, shredded

In a large skillet, saute' the mushrooms & onions in butter until tender. Remove from the heat & stir in the spinach. In a large bowl, whisk the eggs. Whisk in the cream, salt & pepper. Add the mushroom mixture  & stir well. Stir in the cheese. Pour everything into a greased 10" pie plate. Bake at 350 degrees for 35-40 minutes or until set & lightly browned. Let stand for 10 minutes before serving.

*Can be cut into slices & frozen. To serve, cook slices in microwave 1 minute.

Rodeo Breakfast

3 T. oil
2 pkg. refrigerated diced potatoes ( or dice them yourself)
1 lb smoked sausage, cut into 1/4" slices
1 medium onion, diced
1 pepper (any color), diced
salt & pepper
2 C. cheddar cheese, shredded
6 eggs, beaten

Heat oil in large skillet. Fry potatoes until just starting to brown, about 5 minutes. Add smoked sausage, onions & peppers. Continue to cook until golden brown, about 5 minutes. Add beaten eggs. Cook until done. Sprinkle cheese over top, cover, remove from heat. Serve with Salsa if desired.

German Pancakes

My kids love to see this pancake come out of the oven. It looks like a mountain range. The syrup is like caramel sauce!! So yummy! So good with bananas on top. Kinda like dessert!

2 T. butter

6 eggs
1 C. milk
1 C. flour
1/2 t. salt
powdered sugar for dusting on top

Preheat oven to 400 degrees. Place butter in 9X13 pan. Place in oven to melt butter. Place the eggs, milk, flour & salt in blender. Cover & process until smooth. Pour batter into hot pan with melted butter. Bake, uncovered at 400 degrees for 20 minutes. Sprinkle with powdered sugar. Serve with buttermilk syrup.

Buttermilk syrup:
1 1/2 C. sugar
3/4 C. buttermilk
1/2 C. butter
2 T corn syrup
1 t. baking soda
2 t. vanilla

In a saucepan, combine the first 5 syrup ingredients. Bring to a boil. Boil 7 minutes. Remove from the heat. Stir in vanilla. Serve over the German pancakes.

Vanilla Crepes

1 1/2 C. milk
3 egg yolks
2 T vanilla
1 1/2 C. flour
2 T. sugar
1/2 t. salt
5 T. melted butter

In a large bowl, mix together the milk, egg yolks & vanilla. Stir in the flour, sugar, salt & melted butter until well blended.
Heat a 10-12" skillet over medium heat until hot. Coat with cooking spray. Pour about 1/4 C. of batter into the pan & tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over & cook until lightly browned on the other side & edges are golden. Repeat with remaining batter.
Fill crepes with your favorite fruit, cream, caramel or even ice cream to serve.

Our favorite is a sweetened cream cheese filling with fruit on top. Bananas & strawberries are good.
Filling:
8oz cream cheese
1/2 C. powdered sugar
1 C. cool whip

Zucchini Pie

3 C. zucchini, diced
1 onion, chopped
4 eggs, beaten
1 C. bisquick
1/2 T. dried parsley
1/2 C. oil
1/2 C. parmesan cheese
1/2 t. dried marjoram
pepper to taste
Preheat oven to 350 degrees. Grease 12" pie plate. Combine ingredient. Spread into prepared pan. Bake for 30 minutes or until browned & set.

Scrambled Egg Muffins

My kids love these in the morning. I freeze them & they get one out & microwave it for 45 seconds or so & they have a quick hot breakfast. Eric likes to toast an english muffin & squish it in between.

1/2 lb pork sausage, or sausage links, cut up
12 eggs
1/2 C. green onion, chopped
1/4 C. green pepper, chopped
1/2 t. salt
1/4 t. pepper
1/4 t. garlic powder
1/2 C. cheese, shredded
cook pork. drain. Mix remaining ingredients, add sausage. Spoon into greased muffin cups (1/3 C.) Bake at 350 degrees for 20 minutes.

Breakfast Casserole

We made this a few months ago for a Ward Brunch. My kids love it!

24 oz. hash brown potatoes
1 1/2 c. cheddar cheese, shredded
1 1/2 c. monterey jack cheese, shredded
2-3 c. diced ham
3/4 c. evaporated milk
8 eggs, beaten
1/4 t. seasoned salt


Spray 9 X13 pan with PAM. Put potatoes in pan. Bake at 425 degrees for 25 minutes. Remove from oven. Alternate layers of cheese & ham over the cooked potatoes. Beat the eggs & add seasoned salt. Pour over the ham & cheese. (At this point you can cover & refrigerate to bake in the morning-that's what we did for Christmas morning)Bake at 350 degrees for 30-35 minutes or until knife inserted in middle comes out clean. Great with To Die For Blueberry Muffins.

Strawberry-Banana Smoothie

1 C. strawberries
1 medium banana
1 C. water
1/3 C. nonfat dry milk
2 T. sugar
6 ice cubes

Blend in blender until smooth. Add more ice if needed.
Yield: about 4 servings

To Die For Blueberry Muffins

3 C. flour
1 1/2 C. sugar
1 t. salt
4 t. baking powder
2/3 C. oil
2 eggs
2/3 C. milk
2 C. blueberries

Crumb Topping:
1/2 C. brown sugar
1/3 C. flour
1/4 C. butter, cubed
1 1/2 t. cinnamon

Mix together with fork & sprinkle over muffins before baking.

Preheat oven to 325 degrees. Fill muffin pan w/ liners. Combine flour, sugar, salt & b. powder. Place oil in 2 C. measure. Add the egg & enough milk to make 2 cups total. Pour into flour mixture. Fold in blueberries. Fill muffin cups to the top & sprinkle with crumb topping. Bake for 30-35 minutes or until done when tested with toothpick in center.

I made these when I was pregnant & forgot to put the blueberries in. I had to stick them in the individual muffins before baking. At least I remembered before baking them!!

Biscuits & Gravy

This is one of Craig's favorite breakfasts. Actually, he would eat it for any meal.

Biscuits:
2 c. flour
4 t. baking powder
1 T. sugar
3/4 t. salt
1/4 c. shortening
7/8 c. milk-not sure why this amount, but it is between 3/4 & 1c. on my glass measuring cup.

Mix dry ingredients in mixing bowl. Add shortening. Cut into flour mixture until crumbly. Add milk. Stir with fork. Gently knead 10 times. Pat out to 3/4" thick. Cut out, place on ungreased cookie sheet. Close together for soft sides, Further apart for crunchier sides. Bake at 450 degrees for 12-15 minutes or until brown. Yield: 9 biscuits

Gravy:
1 lb breakfast sausage
3/4 c. flour
3 c. milk
salt & pepper, if needed

Cook sausage in a pan, sprinkle flour over top & stir. Slowly add milk. Stir until thickened. Add salt & pepper to taste. Serve over biscuits.

*We always use our venison breakfast sausage & never add salt or pepper, but you may need to if using a different sausage.

Crustless Spinach Quiche


1 (10 oz) pkg. frozen spinach, thawed & drained
5 eggs
2 c. shredded sharp cheese
1/2 t. onion powder
1/4 t. salt
1/8 t. pepper

Preheat oven to 350 degrees. Lightly grease 9" pie plate. In medium bowl, mix together all ingredients. Pour into pie plate. Bake for 30 minutes or until eggs have set. Let cool 10 minutes before serving.

Cyclops

4 slices of bread
4 eggs
butter
salt & pepper

Cut a circle in each piece of bread using a glass. Butter both sides of bread, including the circle piece that was cut out. Warm up skillet over medium heat. Place bread in pan, crack egg into hole. Sprinkle with salt & pepper. Cook 2-3 minutes until almost set. Flip over & finish cooking to desired 'doneness'.

Sunny Honey Granola


4 C. rolled oats
1 C. Slivered almonds
1 C. sunflower seeds
1 C. coconut
1 C. honey
3/4 C. oil
1/2 C. raisins or craisins (optional)

Preheat oven to 300 degrees. Mix oats, almonds, sunflower seeds & coconut in a large mixing bowl. Stir honey & oil together in a seperate bowl & then combine with oat mixture. Spread out on a greased baking sheet & bake for 20-30 minutes, or until golden. Sprinkle with raisins if desired. Spread out on wax paper or foil to cool. Break into clusters & store in airtight container or zip bag. We love this over strawberry yoplait yogurt.

Hansen's Buttermilk Pancakes


I remember my mom making these with little diced up 'spam' in them. We loved them this way!

1 3/4 c. flour
3 t. baking powder
1 t. salt
1/2 t. baking soda
2 T. sugar
3 T. oil
2 eggs
2 c. buttermilk

Wisk until smooth. Cook on preheated 375 degree griddle
Instead of buttermilk, you may use milk w/ 1 t.lemon juice

Rodeo Breakfast


3 Tbsp. vegetable oil
2 pkgs. refrigerated diced potatoes
1 lb. Hillshire Farm® Smoked Sausage, cut into 1/4-inch medallions
1 medium onion, diced
1 pepper (any color), diced
Salt and pepper, to taste
2 cups cheddar cheese, shredded
6 eggs
Salsa (optional)

Heat oil in a large skillet on medium-high heat. Fry potatoes until just starting to brown, about 5 minutes. Add smoked sausage, onions and peppers, and continue to cook until golden brown (about 5 more minutes). Mix eggs in a bowl & pour over potatoes. Cook until done. Sprinkle shredded cheese evenly over the top, cover, and remove from heat. Serve with salsa if desired.
